Frank, Mary & Claire Slattery
Carrig Country House & Restaurant was established in 1996 when Frank & Mary Slattery fulfilled a long-held dream and purchased a Victorian Lakeside Manor. Their daughter Claire joined them in 2015 and along with Frank and Mary she now co-manages Carrig Country House & Restaurant.
All have brought their own experiences from other industries to the business, Claire trained as an accountant, Frank began his career as an army officer and subsequently owned his owned motor dealership and Mary previously enjoyed a career in banking.
Along with their dedicated team they have grown an incredible business in both accommodation and the restaurant from the ground up, and their focus and determination to place excellence at the core of everything they do is evident when you visit with them.
Under Frank & Mary’s leadership, and with the help of their wonderful and dedicated team, Carrig has been the recipient of many awards and accolades for its accommodation and food now for over two decades. Amongst the most recent awards was the Georgina Campbells ‘Irish Breakfast Award’ in association with Fáilte Ireland.
Head Chef - Patricia Teahan
Head Chef Patricia Teahan is leading member at the team at Carrig. Patricia is local to Dooks and originally joined the team at Carrig in 2002 as an accomplished graduate from IT Tralee, where she had won a scholarship to Johnson & Wales Academy in the USA. Patricia worked her way up to Sous Chef at Carrig before broadening her experience elsewhere for a few years.
She then re-joined Carrig in 2009 as Head Chef, a position she holds and enhances to this day. Not only has Patricia wonderful cooking skills with amazing attention to quality, flavour, and presentation but she is also a superb Kitchen Manager & Team Leader.
She is also a wonderful mentor and teacher to our new young commis who arrive each year. Chef Patricia is constantly “raising the bar” in terms of the food offering at Carrig and to this end has sought (of her own volition) a series of stages over the years with such luminaries as Patrick Guilbaud, Ross Lewis, J.P. McMahon and Le Taillevent, a 2 Star Michelin Restaurant in Paris and most recently to Ledbury Notting Hill.
Our guest book is packed with comments about the quality and flavour of the food at Carrig, often comparing it to Michelin Star Restaurants. This is a credit to Patricia and the kitchen team, which she leads and inspires.
As well as putting Carrig on the food map and winning the RAI ‘Best Chef in Kerry’ Award 2015, she is also raising her beautiful daughter. At our annual Team Outing she is the life and soul of the party. A true all-rounder, great person & team player.
